In-Cho-LADA Momma...

My friend Tina has this great and amazing enchilada sauce that was actually the recipe from a Mexican Restaurant in Bountiful UT. I was telling my other friend Tami (I know two friends...so moving up the friend ladder fast)about this sauce and she wanted me to post it so here you go Tami:

1/2 cube butter (umm, if you think it is fat free IT IS)
1 tablespoon chili powder
1 small can tomato paste
1 tablespoon beef base OR 2 beef bouillon cubes
1 teaspoon salt
4 cups water
1/2 tablespoon paprika

DIRECTIONS:
Put everything in a sauce pan on Medium heat and mix until everything is blended.

MIX in a separate bowl: 1 cup COLD water(make sure it is cold, if the water is hot the flour will clump) and 1/2 cup flour.
Add the water/flour mix with the sauce and stir until sauce thickens.

1. I usually make chicken enchiladas (I throw a couple of chicken breast with some chicken broth in the crock pot and then shred the breast when cooked)
2. I will spread a spoon full of the enchilada sauce on the tortilla (you can use corn or flour...if you use flour get the uncooked tortillas from Costco)
3. Spread some of the shredded chicken and then some cheese on the tortilla.
4. Roll the enchilada, after filling a 9x13 pan, pour more sauce over the enchiladas throw some cheese on them
5. Cook on 350 for 15 minutes

Fish Tacos...Nice and Easy, Yummy and So Not..umm, CHEESEY?

Okay so yesterday I was craving, yes CRAVING fish tacos. I know what you are all thinking, and I have to say NO, I am not pregger's...yes Mom, much to your chagrin, I am not pregnant. I just wanted Fish Tacos. So I looked up Fish Taco's on FoodNetwork.com...which by the way is such a great place to get recipes. But the Taco's were so flipping good that I thought I would share the recipe.

* 1 1/2 pounds mahi-mahi filets ( I actually ended up with Ahi Tune steaks...I think they butcher was not paying attention to what I was saying and looking else where...I am just saying!)
* 1 tablespoon of White Cooking Wine
* 2 tablespoons lime juice
* 1 teaspoon minced garlic
* 1 tablespoon vegetable oil
* 1 lime, quartered
* 12 small corn tortillas, warmed (we used the corn tortillas and also the flour tortillas from Costco...or Marianne's coke hee hee)
* Romaine lettuce, shredded, for garnish
* Pico de Gallo salsa, for garnish (I couldn't find any at the store so I made some myself...tomato's, diced, an onion chopped, some cilantro and fresh garlic and some salt, and a fresh squeezed lime)
* 1 avocado, pitted and cut into thin slices, for garnish
* Sour cream or crema, for garnish
* Mexican mix cheese...not on original recipe but I added because I like cheese

Directions

Pat fish dry and combine in a nonreactive bowl with lime juice and garlic and white cooking wine. Set aside to marinate about 10 to 15 minutes.

When fish is ready, remove it from the marinade, pat dry, and season with salt and freshly ground black pepper.

Heat oil in a large nonstick frying pan over medium-high heat. When oil shimmers, place fish skin-side down in skillet. Cook until opaque and firm to touch, about 3 minutes per side. **I cooked on the grill until cooked just because I like the flavor of fish from the grill better than cooked in the pan.

Flake the fish, squeeze one of the lime wedges over the top, and toss to coat. To make a taco, stack 2 tortillas on top of each other and fill with fish, lettuce, salsa, a few avocado slices, and a dollop of sour cream. Repeat to make 6 tacos total.

I then had fresh strawberries and cherries on a bowl for dessert. It was SO good and I must toot my horn for a minute. We had invited the Wenzbauer's over for dinner and as they were getting up from the table Steve, my brother-in-law said that those were the best fish tacos he has had since leaving Cabo San Lucas...COOKING MOJO IS BACK!

Happy Father's Day...atleast this gift can't be taken back!

Why is it that we can always remember the bad, the crappy and often slap to the head WHY memories while why we can NEVER remember the good, the awesome and often blush to the cheeks memories? GRRRR, is this just a shrug and a thought of such is life sort of thing? Who knows...but I do know that this happens to me far to often...one of those memories is when I was 12.

I had been given the assignment to talk in Sacrament Meeting on Father's Day; I was not only nervous but I wasn't sure what to say. I remember telling my Dad that I didn't know what to say...he interrupted this as he wasn't a good Dad. What I really meant was that he was such an amazing Father, he did so much for us, that I didn't even know how to begin telling the congregation that I had the World's Best Dad. I felt so horrible that he took this wrong that it still haunts me to this day! Why do I tell you this...because I am going to give you that talk just 20 years later...okay 21 years later...see I told you I had a bad memory.

I love my Dad...I loved how for Christmas one year we got "The Farming Game" and as we played he explained, literally, how to farm! Did he not realize it was just a game...did we not realize as kids he was explaining life? I loved that he was the ultimate outdoors man...but managed to be the world's biggest republican. I loved that he was a quiet man, but yet always knew what to say. I loved that he was a kid at heart and yet had the work ethic of 5 men. I loved that he called me Anner...I loved that he thought that lifes biggest problems could be solved with two simple things: a Snickers bar and a bottle of Vaseline Intensive Care Lotion (don't ask me...ask Lisa). I loved that he tried to be a gourmet cook but really could only make bread and milk...and the occasional bowl of cream of wheat. I loved when went camping, I loved when we went boating, I just loved being together. Thanks Dad...

And now I have an opportunity to see a new Dad, sort-of, working his magic with his kids. Jim doesn't think much of his parenting skills, do they ever? but he is a great Dad. I have often thought that my kids saving grace is their Father. He can explain anything, anyhow, anytime...He can play any sport, do any trick, make any noise. He can rip off any scripture, quote or article, from memory, to the boys regarding any subject at anytime! He is smart, funny, and loving to his children. He is the ultimate example of what a Father should be and he is the ultimate example of a how a Father should be. I love him, his children love him...what else do we need? Thanks Jim...

Oh SNAP...I Knew I Was Going To Forget Something!

Okay so I thought we were doing really well with moving Potter Headquarters from Omaha to Bountiful. I remembered the boxers (yes, I forgot underwear one time we came to UT) and socks and even extra trunks for our many (well at least I THOUGHT...what is up with all this darn rain) excursions to the pool. So the things I remembered were all great...but the things I forgot were HUGE!

So I forgot to grab the nice camera in St. George on our way to California (yes we got it back but I got 'the look' from someone who must not be named...okay it rhymes with HIM...) But most importantly I forgot the thingy that gets the pictures from the camera to the computer. Yes, I know, I totally do speak Tech...how about you?! So in conclusion...see doesn't that sound smart, I can't do that thing that gets the new pictures to here, so I am going to give you a list...insert imagination here:

1. We purchased (oh good gravy we are so WHITE TRASH) Lagoon passes so we have been visiting the poor man's disneyland about 3 times a week.

2. We have been...and then...ummm, hmmm, ya we have only stuck with number one! Maybe next week we can actually fill in 2 with events and maybe get even to number 3.

3. Oh, wait I do have a number 3. We went up to Snowbird and went swimming at The Iron Blossom with Shelly and her kids. We had much fun as this was the first decent day to swim. But about an hour and half later it started to rain.

Well that is it. After getting back from Colorado we have done nothing except for 1 and 3...more to come, I hope!

And A Happy Birthday To You...And You...And You....How Many Have I Missed?

Okay so I thought I would be the 'cool' aunt and post a message to all my nieces and nephews, that roam this world, a birthday message. One of encouragement for the start of a new year, one of humor, love and basic advice NOT to follow. I started out like gang-busters but then January 2nd hit and have been quickly riding the 'looser train'...I keep forgetting their birthdays, but that isn't big surprise, everybody knows that I forget people birthdays all the time; except for mine but in my defense I WANT to forget mine but somehow it always finds me. Anyway to make up for my 'lack-luster' memory I am getting caught up on all those who I have missed....Love ya, miss ya, wouldn't want to be ya! heehee

Spencer: Noun, Spens' eR...or more commonly heard as SPENCER DON'T YOU DARE!!! Definition (1) A boy full of energy, ants-in-his-pants, bouncing off the walls, the couch and other siblings that may have survived the phenomenon known as Spencer. (2) The face of an angel but the spit fire of the devil. (3) A humorous personality that loves to say quirky sayings ie.."I DO'S" and enjoys watching his mother chase after him upon saying something naughty ie... Whichever definition you choose to define our little Spencer Harrison Potter, he is our little "Spenace the Menace" I love him even though he pushes me to my limit every single day. Even though he drives me nuts, I love him, his Dad loves him, his brothers love him. I will never forget his birth (how could I...it was the single most painful experience in my life). Congratulations Graduate

Alex during the 2 and 1/2 hour ceremony...yes 2 and a half hours!

This past weekend, Jim, the boys, and I made yet another, yes, ANOTHER, summer trip. We have driven in the red-grocery-go-getter about 2,000 miles and have driven through 6 states...yes 2,000 miles in the van...did you get it, do you need that stat one more time...2000 MILES in 3 weeks. What...what is that you say? Am I sick, want-to-throw-up, just thinking about getting in the grocery-go-getter one more time...yes, yes I am.

Besides us being sick of driving, our DVD player has decided it is sick of showing movies to ant-in-the-pants boys! How dare you DVD player...okay enough about the traveling freak show known as the potters one wheels...back to my purpose.

We went to Telluride, Colorado to support my niece, Alexandra aka Alex, graduating from Telluride High School. She is an amazing person whom one day, without a doubt in my mind, will be a published author. I am still marveling at the fact that she went to Taiwan all by herself when she was a mere 17 years old and embraced everything that it Taiwan had to offer. I am still marveling at the fact that she had to put up with some horrible situations and yet never faltered and never stumbled on what she believed. Alex is amazing and I congratulate you to the fullest (okay my fullest is a shpeel on my blog). I have complied a list of things I hope for you while in college at Santa Fe, NM
1. I hope you date...alot...lots and LOTs of dating (remember my key rule for dating: a free meal is a good thing even when the boy is NOT a good thing)
2. I hope your roommate doesn't stink...if she does, move in with a boy, they are SO much easier to live with, just don't tell your mom I told you to do it.
3. I hope your professors are amazing...ya that sums that up.
and hmmm what else...oh ya...
4. Have a jolly good time because the real world sucks.
